This recipe was demonstrated at the farm stand of The Youth Farm at the High School for Public Service in Crown Heights, Brooklyn as part of Just Food’s Community Chef program. Ingredients:
1 stick of butter, unsalted (at room temperature)
2 tbs fresh herbs or 1tbs dried herbs of your choice
1 teaspoon salt
pepper, to taste
Plop butter into a bowl and sprinkle the herbs, salt, and pepper on top. Using a butter
knife, slice the butter and let the herbs fall through. Keep going until the herbs are evenly
mixed in.
Store the butter in an airtight container in the fridge, or use wax paper to wrap into a ball
or cylinder.
Herb butters can be used on baked, sauteed, and roasted vegetables, corn, and squash,
fruit, ravioli, and your favorite bread.
